  • 1 medium yellow onion
  • 14.5 oz canned fire-roasted diced tomatoes
  • 2 tbsp Cajun seasoning
  • 1/2 cup heavy cream
  • Fresh parsley (for garnish)

Instructions

  1. Chop bell peppers and onion into bite-sized pieces.
  2. Cook pasta in salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  3. In a large skillet over medium heat, sauté onions in olive oil until translucent, about 3-5 minutes.
  4. Add sliced Cajun sausage; cook until browned, around 5 minutes.
