- 4 boneless, skinless chicken breasts (about 1 lb), diced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 cup bell peppers (red and yellow), sliced
- 1 medium onion, sliced
- 2 tsp cumin
- 2 tsp chili powder
- 2 tbsp olive oil
- Sour cream and salsa for serving
Instructions
- Heat olive oil in a skillet over medium heat. Add diced chicken and season with cumin and chili powder. Cook until golden brown and cooked through, about 6-8 minutes.
- In the same skillet, add sliced bell peppers and onions. Sauté until softened and fragrant, about 4-5 minutes.
- On half of each tortilla, layer cooked chicken, sautéed veggies, and a generous amount of cheddar and Monterey Jack cheese. Fold over to create a taco-like shape.
- In a clean skillet over medium heat, lightly spray with cooking spray. Place folded quesadillas in the pan; cook until golden brown on both sides (around 3-4 minutes per side).
- Remove from heat and let rest briefly before slicing into wedges. Serve hot with sour cream and salsa.
