  • 4 boneless, skinless chicken breasts (about 1 lb), diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup bell peppers (red and yellow), sliced
  • 1 medium onion, sliced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced chicken and season with cumin and chili powder. Cook until golden brown and cooked through, about 6-8 minutes.
  2. In the same skillet, add sliced bell peppers and onions. Sauté until softened and fragrant, about 4-5 minutes.
  3. On half of each tortilla, layer cooked chicken, sautéed veggies, and a generous amount of cheddar and Monterey Jack cheese. Fold over to create a taco-like shape.
  4. In a clean skillet over medium heat, lightly spray with cooking spray. Place folded quesadillas in the pan; cook until golden brown on both sides (around 3-4 minutes per side).
  5. Remove from heat and let rest briefly before slicing into wedges. Serve hot with sour cream and salsa.
