- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 1 cup refried beans
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup salsa
- ½ cup sour cream (for serving)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Boil salted water in a large pot; cook pasta shells until al dente. Drain and set aside.
- In a skillet, cook ground beef or turkey over medium heat until browned. Stir in taco seasoning and refried beans; mix well.
- Fill each cooked shell with the meat mixture and place in a greased baking dish.
- Pour salsa over the stuffed shells and top with cheddar and Monterey Jack cheeses.
- Cover with foil and bake for 20 minutes or until cheese is melted.
