  • 1 medium sweet onion, chopped
  • 4 garlic cloves, minced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 2 tbsp unsweetened cocoa powder
  • 1 cup low-sodium chicken broth
  • ¼ cup toasted peanuts or almonds (optional)

Instructions

  1. Gather all ingredients. Finely chop onions and garlic.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; brown for about 5-7 minutes per side until golden.
  3. Remove chicken from the skillet. Add onions and garlic to the same pan; sauté for 3-4 minutes until fragrant.
  4. Stir in mole sauce, chili powder, and cocoa powder; simmer for 5 minutes.
