Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced thinly
  • ½ cup Greek yogurt
  • 2 tsp Dijon mustard
  • 4 whole wheat tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to 375°F (190°C). Season chicken with salt and pepper, then cook until golden brown (about 20-25 minutes). Allow to cool before shredding.
  2. While the chicken is cooking, chop the lettuce, cucumber, and tomatoes into bite-sized pieces.
  3. In a bowl, mix Greek yogurt and Dijon mustard until smooth; season with salt and pepper.
  4. Lay out tortillas flat and spread dressing down the center. Add veggies followed by the shredded chicken.
