  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 14 oz canned fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups tortilla chips (for topping)
  • ½ cup fresh cilantro, chopped

Instructions

  1. Prep your ingredients by chopping the onion and bell peppers.
  2. In a large pot over medium heat, add 2 tbsp olive oil. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and cook until golden brown.
