  • 3 large bell peppers (red, yellow, green) – diced
  • 1 lb ground beef or turkey
  • 1 medium onion – chopped
  • 3 cloves garlic – minced
  • 1 cup long-grain white rice
  • 15 oz tomato sauce
  • 4 cups vegetable or chicken broth (low-sodium)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional – cheddar or mozzarella)

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent. Add minced garlic and cook for an additional minute.
  2. Stir in the ground meat and cook until browned. Drain any excess fat.
  3. Add the uncooked rice and tomato sauce; mix well to coat.
  4. Pour in the broth along with oregano, basil, salt, and pepper. Bring to a simmer.
  5. Stir in the diced bell peppers and allow to simmer for about 25-30 minutes until rice is tender.
