  • 1 lb large shrimp, peeled and deveined
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup sweet peas (fresh or frozen)
  • ½ cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Prepare all ingredients: chop onion and mince garlic.
  2. In a large pan over medium heat, melt olive oil and butter. Sauté onion until translucent, then add garlic for about one minute.
  3. Add Arborio rice, stirring for about one minute until lightly toasted.
  4. Deglaze the pan with white wine, stirring until evaporated.
  5. Gradually add warm broth, one cup at a time, stirring frequently until absorbed before adding more.
  6. When rice is nearly done (18-20 minutes), fold in shrimp and peas; cook until shrimp are pink (3-5 minutes).
  7. Stir in Parmesan cheese before serving hot.
