Ingredients

Scale
  • 1 package egg roll wrappers (about 20 wrappers)
  • 1 pound lean ground beef
  • 2 cups shredded cheese (Cheddar or Monterey Jack)
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1/4 cup chopped green onions
  • 1 cup sour cream (for dipping)
  • Oil for frying (vegetable or canola)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and mix in jalapeños and green onions until fragrant.
  2. Remove from heat and stir in shredded cheese until melted.
  3. Lay an egg roll wrapper on a clean surface, spoon about 2 tablespoons of filling into the center, fold the sides over, and roll tightly from bottom to top.
  4. Heat oil in a deep pan over medium-high heat and fry each egg roll until golden brown, about 3-4 minutes per side. Drain on paper towels.
  5. Serve warm with sour cream for dipping.
