  • 2 lbs chuck roast
  • 5 dried guajillo chiles
  • 1 tsp cumin seeds
  • 4 garlic cloves
  • 4 cups beef broth
  • 12 corn tortillas
  • Fresh cilantro (for garnish)
  • Chopped onions (for garnish)

Instructions

  1. Remove stems and seeds from guajillo chiles; soak in hot water for 15 minutes until softened.
  2. Blend soaked chiles with toasted cumin seeds, garlic, and a little beef broth until smooth.
  3. In a large pot, brown the chuck roast on all sides over medium-high heat for about 5-7 minutes.
  4. Add the spice paste, bay leaves, and remaining beef broth; bring to a simmer.
  5. Cover and reduce heat to low; cook for 3 hours until the meat is fork-tender.
  6. Shred the beef with two forks; warm tortillas on a skillet.
  7. Fill each tortilla with shredded beef and top with cilantro and onions before serving.
