Ingredients

  • All-Purpose Flour
  • Poppy Seeds
  • Granulated Sugar
  • Fresh Lemons (juice and zest)
  • Baking Powder
  • Salt
  • Eggs
  • Unsweetened Yogurt or Sour Cream
  • Melted Butter or Oil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds until evenly combined.
  3. In another bowl, mix yogurt (or sour cream), melted butter (or oil), eggs, lemon juice, and zest until smooth.
  4. Gradually combine the wet ingredients with the dry mixture. Stir gently until just combined to avoid overmixing.
