- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until fluffy.
- While quinoa cooks, chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.
- In a large mixing bowl, combine cooked quinoa with the chopped vegetables. Add olives and feta cheese.
- Drizzle olive oil and lemon juice over the mixture; season with salt and pepper. Toss gently until well combined.
