Description

  • 34 boneless skinless chicken breasts
  • Large flour tortillas
  • 1 can cream of chicken soup
  • 1 can diced green chiles
  • 2 cups shredded cheese (Monterey Jack & Cheddar)
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken until it reaches an internal temperature of 165°F, then shred.
  3. In a bowl, mix cream of chicken soup, sour cream, green chiles, and half the cheese.
  4. Spread sauce on each tortilla, fill with shredded chicken, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour remaining sauce over enchiladas and sprinkle with leftover cheese.
  6. Bake for approximately 25 minutes until golden brown and bubbly.
