  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 tart apples (like Granny Smith), thinly sliced
  • Optional: pinch of sugar if desired

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, warm the olive oil. Season the chicken breasts with salt and pepper.
  3. Brown the chicken for about 5 minutes on each side until golden brown. Remove the chicken and set aside.
  4. In the same skillet, sauté minced garlic until fragrant. Add apple cider and chicken broth, scraping up any browned bits from the pan.
  5. Stir in Dijon mustard and thyme, then return the chicken to the skillet.
  6. Scatter sliced apples over the chicken, cover with foil, and bake for 25-30 minutes until cooked through.
