  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups sweetened shredded coconut (for frosting)
  • 1 cup chopped pecans (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream softened butter with sugar until light and fluffy. Beat in eggs one at a time and add vanilla extract.
  4. Gradually mix in dry ingredients alternating with buttermilk until just combined.
  5. Stir in boiling water until well mixed (batter will be thin).
  6. Pour batter evenly into prepared pans and bake for about 30-35 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting with coconut-pecan topping.
