  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup strawberries, sliced
  • 1 cup blueberries

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan.
  2. In a bowl, beat softened cream cheese with sugar and vanilla extract until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  4. Pour half of the cheesecake filling over the crust and layer with half of the strawberries and blueberries. Repeat with remaining filling and fruits.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  6. Serve chilled, garnished with extra berries if desired.
