Description

Ingredients

  • Lean Ground Beef
  • Flour or Corn Tortillas
  • Canned Enchilada Sauce
  • Shredded Monterey Jack and Cheddar Cheese
  • Diced Onions
  • Cumin and Chili Powder
  • Olive Oil
  • Sour Cream (for serving)

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté diced onions until soft (about 5 minutes). Add ground beef and seasonings; cook until browned.
  2. Warm tortillas in a dry skillet or microwave to make them pliable.
  3. Spoon the beef mixture onto each tortilla, roll tightly, and place seam side down in a greased baking dish.
  4. Pour enchilada sauce over the rolled tortillas and top generously with shredded cheese.
  5. Preheat oven to 350°F (175°C) and bake uncovered for 20-25 minutes or until bubbly and golden brown.
