Instructions

  1. Prep the ingredients: Rinse and dry baby potatoes; finely chop fresh herbs.
  2. Sear the steak: Heat olive oil in a skillet over medium-high heat. Season the ribeye with salt and pepper, then cook for 4-5 minutes until golden brown.
  3. Add garlic & herbs: Reduce heat slightly, add crushed garlic and herbs around the steak to infuse flavor.
  4. Cook potatoes: In another pan, toss baby potatoes with olive oil, salt, and pepper; cook until golden brown (15-20 minutes), stirring occasionally.
  5. Create garlic butter: Remove steak once cooked to your liking. In the same pan, melt butter with drippings, swirling to combine.
  6. Baste & serve: Return steak to the pan, basting with melted garlic butter. Let it rest briefly before slicing and serving with potatoes.
