  • 2 large eggs

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. In a large bowl, combine pancake mix, eggs, milk, and vanilla extract until just blended; lumps are fine.
  2. In another bowl, beat softened cream cheese with powdered sugar until smooth and creamy.
  3. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on top; flip and cook until golden brown.
  4. Once flipped, add a spoonful of cheesecake filling onto the pancake and cover with a small amount of batter to seal it in.
  5. Repeat with remaining batter and filling. Stack pancakes high on a plate and serve warm with desired toppings.
