Description

Maple Pecan Brie Sweet Potatoes are a delightful fusion of sweet and savory flavors, perfect for any occasion. The creamy brie melts into tender sweet potatoes, while toasted pecans add a satisfying crunch, all harmonized with a drizzle of rich maple syrup.

  • 4 medium sweet potatoes (about 2 lbs)
  • 8 oz brie cheese
  • 1 cup pecans, toasted
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and pierce sweet potatoes several times with a fork.
  2. Bake sweet potatoes directly on the oven rack or on a baking sheet lined with parchment paper for 45-60 minutes until tender.
  3. While baking, toast pecans in a dry skillet over medium heat for about 5 minutes. Chop coarsely and set aside.
  4. In a bowl, mix maple syrup and cinnamon; set aside.
  5. Once baked, slice open sweet potatoes lengthwise and fluff insides with a fork. Layer brie slices inside while still hot.
  6. Drizzle maple syrup mixture over the top and sprinkle with toasted pecans. Optionally add butter on top and return to the oven for 5-10 minutes until heated through.
  7. Serve warm as a side dish or light main.
