- 4 medium sweet potatoes (about 2 lbs)
- 8 oz brie cheese
- 1 cup pecans, toasted
- 1/4 cup pure maple syrup
- 1 tsp ground cinnamon
- 2 tbsp unsalted butter (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Scrub and pierce sweet potatoes several times with a fork.
- Bake sweet potatoes directly on the oven rack or on a baking sheet lined with parchment paper for 45-60 minutes until tender.
- While baking, toast pecans in a dry skillet over medium heat for about 5 minutes. Chop coarsely and set aside.
- In a bowl, mix maple syrup and cinnamon; set aside.
- Once baked, slice open sweet potatoes lengthwise and fluff insides with a fork. Layer brie slices inside while still hot.
- Drizzle maple syrup mixture over the top and sprinkle with toasted pecans. Optionally add butter on top and return to the oven for 5-10 minutes until heated through.
