  • 34 boneless, skinless chicken breasts
  • 2 large sweet potatoes (about 500g)
  • 1/2 cup BBQ sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 1 tsp smoked paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and chop sweet potatoes into bite-sized pieces. In a bowl, toss them with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
  3. Spread sweet potatoes on the baking sheet and roast for 25-30 minutes until golden brown and tender.
  4. While sweet potatoes roast, season chicken breasts with salt and pepper (add extra paprika if desired). Grill over medium heat for 6-7 minutes per side or bake at 375°F (190°C) until cooked through.
  5. In the last few minutes of cooking chicken, brush BBQ sauce over the top.
  6. Serve by layering roasted sweet potatoes in bowls, topping with sliced BBQ chicken, and garnishing with fresh parsley.
