Instructions
- Preheat a skillet over medium-high heat and add olive oil.
- Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown and cooked through (165°F internal temperature).
- Remove from heat and spread basil pesto over the warm chicken.
- Dice the tomatoes while the chicken cools slightly.
