- 2 lbs Russet potatoes (diced)
- 1 lb ground beef or turkey
- 1 packet taco seasoning (about 1 oz)
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream (or Greek yogurt)
- ¼ cup green onions (chopped)
- ¼ cup fresh cilantro (chopped)
- 2 tbsp olive oil
Instructions
- Preheat the oven to 425°F (220°C). Wash and dice russet potatoes into bite-sized pieces.
- Toss the diced potatoes in a large bowl with olive oil, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes until golden brown and crispy.
- While the potatoes roast, cook ground beef or turkey in a skillet over medium heat until browned. Add taco seasoning and water according to package instructions; let simmer for about 5 minutes until thickened.
- Once the potatoes are done, remove them from the oven and layer the cooked meat on top. Sprinkle with cheddar cheese and return to the oven until the cheese is melted.
- Serve hot topped with sour cream, green onions, and cilantro.
