  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp flaky sea salt (plus extra for topping)
  • 1 cup rolled oats

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Toast mixed nuts on a baking sheet for 8-10 minutes until fragrant.
  3. Melt dark chocolate chips in a heatproof bowl over simmering water or in the microwave until smooth.
  4. Stir in honey or maple syrup and vanilla extract into the melted chocolate.
  5. In a large bowl, combine toasted nuts, rolled oats, and chocolate mixture until well coated.
  6. Press the mixture firmly into the prepared baking dish and refrigerate for at least one hour until set.
