  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 ripe mango, diced (about 1 cup)
  • 1 cup fresh pineapple chunks
  • 4 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together soy sauce, honey, lime juice, minced garlic, salt, and pepper to create the marinade.
  2. Fold diced mango and pineapple into the marinade.
  3. Place chicken in a zip-top bag with half the marinade and refrigerate for at least 30 minutes (ideally overnight).
  4. Preheat the grill to medium-high heat (400°F/200°C).
  5. Grill chicken for about 6-7 minutes per side until fully cooked (165°F/74°C). Brush remaining marinade over fruits during the last few minutes of grilling.
  6. Serve hot with rice or a salad.
