  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 green onions, finely chopped (for garnish)

Instructions

  2. In a large bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, rice vinegar, and sesame oil until the sugar dissolves.
  3. Add the chicken to the marinade and ensure each piece is thoroughly coated. Cover and marinate in the fridge for at least 30 minutes (or overnight for deeper flavor).
  4. Heat a large skillet over medium-high heat and add a splash of sesame oil. Sear each chicken piece skin-side down until golden brown (about 5 minutes).
  5. Pour the remaining marinade into the skillet with the chicken, bring to a gentle simmer, reduce heat to low, cover, and cook for about 30 minutes until cooked through.
  6. Uncover and let sauce reduce slightly if desired; serve hot over steamed rice or stir-fried vegetables garnished with chopped green onions.
