  • 2 tbsp Dijon mustard
  • 3 tbsp extra virgin olive oil

  • Salt & pepper to taste
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Place chicken breasts on the sheet, brush with olive oil, and season with salt and pepper.
  3. Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (75°C). Let cool slightly before chopping into bite-sized pieces.
  4. In a bowl, whisk together honey, Dijon mustard, olive oil, and lemon juice until smooth.
  5. In a large bowl, combine mixed greens and chicken pieces; drizzle with dressing and toss gently.
  6. If using nuts, sprinkle them over the salad before serving.
