Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Place chicken breasts on the sheet, brush with olive oil, and season with salt and pepper.
- Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (75°C). Let cool slightly before chopping into bite-sized pieces.
- In a bowl, whisk together honey, Dijon mustard, olive oil, and lemon juice until smooth.
- In a large bowl, combine mixed greens and chicken pieces; drizzle with dressing and toss gently.
- If using nuts, sprinkle them over the salad before serving.
