  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (browned)
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup whole milk
  • 2 large eggs (room temperature)
  • 1/2 tsp salt

Instructions

  1. In a large bowl, mix sourdough starter, flour, milk, eggs, and salt until smooth; the dough should be slightly sticky.
  2. In a saucepan over medium heat, melt unsalted butter until golden brown and nutty. Let it cool slightly before adding to the dough.
  3. Knead the dough on a floured surface for about 5-7 minutes until elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm spot until doubled in size (1-2 hours).
  5. Mix brown sugar and cinnamon in a small bowl. Roll out the risen dough into a rectangle, spread softened butter over it, and sprinkle with the cinnamon-sugar mixture.
  6. Roll up tightly from one end to another; slice into mini rolls about 2 inches thick. Place cut side up in greased muffin tins or on parchment-lined baking sheets.
  7. Bake at 350°F (175°C) for about 20 minutes or until golden.
