  • 1 tsp cornstarch (4g)
  • 1 tsp white vinegar or lemon juice
  • 1 cup heavy whipping cream (240ml)
  • 2 cups fresh strawberries, hulled and sliced (300g)

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a circle as a guide.
  2. In a clean bowl, whisk egg whites until foamy. Gradually add caster sugar, beating until stiff peaks form (about 5-7 minutes).
  3. Gently fold in cornstarch and vinegar or lemon juice until just combined.
  4. Spoon meringue onto the prepared sheet, shaping into a round disk with raised edges.
  5. Bake for about 1 hour until dry outside but slightly soft inside. Cool in the oven with the door ajar.
  6. Whip heavy cream until soft peaks form and spread over cooled pavlova. Top with sliced strawberries before serving.
