  • 1 lb (450g) pork shoulder, diced
  • 2 medium leeks, chopped
  • 2 large russet potatoes, diced
  • 1 sheet puff pastry (about 14 oz)
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • 1 medium onion, chopped
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, melt butter. Add onions and leeks; sauté until soft (5 minutes).
  3. Stir in pork shoulder, salt, pepper, and thyme; cook until browned (7-10 minutes).
  4. Add potatoes and chicken broth; simmer until potatoes are tender (15 minutes).
  5. Roll out puff pastry; fill with pork mixture and cover with another layer of pastry. Seal edges.
  6. Brush top with beaten egg and bake for 30-35 minutes or until golden brown.
