- 4 cups low-sodium chicken broth

Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté the onion, green bell pepper, and celery until softened (about 5 minutes).
- Stir in the minced garlic, Cajun seasoning, and bay leaves; cook for another minute.
- Add soaked red beans and chicken broth to the pot; ensure beans are covered by about an inch of liquid. Bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 1-1.5 hours or until beans are tender, stirring occasionally.
- While beans cook, prepare jasmine rice according to package directions.
