Ingredients

  • 1 lb shrimp (fresh or frozen, deveined)
  • 2 ripe avocados
  • 1 ripe mango (diced)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1/4 cup red onion (finely diced)
  • Salt & pepper to taste
  • 1 tsp chili powder (optional)

Instructions

  1. Thaw shrimp if frozen; rinse under cold water and pat dry. Season with salt, pepper, and chili powder.
  2. In a skillet over medium heat, add olive oil and sauté shrimp until pink and opaque (about 2-3 minutes per side). Set aside.
  3. In a bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  4. Slice avocados in half and scoop out some flesh for toppings.
  5. In each avocado half, layer sautéed shrimp and top generously with mango salsa.
  6. Drizzle with extra lime juice if desired and serve immediately.
