  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 medium Granny Smith apples, diced
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (freshly grated if possible)
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan.
  3. In a skillet over medium heat, sauté diced apples with butter, sugar, cinnamon, and nutmeg until slightly softened (about 5 minutes).
  4. In a bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add sour cream, eggs, and vanilla until just combined.
  5. Pour half the cheesecake batter over the crust, layer with sautéed apples, and top with remaining batter.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Allow to cool completely before refrigerating.
