- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 2 cups mashed potatoes (prepared)
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until translucent.
- Add the ground lamb or beef and diced carrots; cook until the meat is browned.
- Stir in frozen peas, thyme, rosemary, and vegetable broth. Simmer for about 5-7 minutes until thickened.
- Meanwhile, prepare creamy mashed potatoes by boiling peeled potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
- Preheat oven to 400°F (200°C). In a baking dish, layer the meat mixture at the bottom and top with mashed potatoes.
