  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 2 cups mashed potatoes (prepared)
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until translucent.
  2. Add the ground lamb or beef and diced carrots; cook until the meat is browned.
  3. Stir in frozen peas, thyme, rosemary, and vegetable broth. Simmer for about 5-7 minutes until thickened.
  4. Meanwhile, prepare creamy mashed potatoes by boiling peeled potatoes until tender. Drain and mash with butter, milk, salt, and pepper.
  5. Preheat oven to 400°F (200°C). In a baking dish, layer the meat mixture at the bottom and top with mashed potatoes.
  6. Bake for 25-30 minutes or until golden brown on top.
