Instructions
- Preheat oven to 400°F (200°C). Slice sweet potatoes into half-inch thick rounds and arrange on a lined baking sheet.
- Drizzle olive oil over the rounds and season with salt, pepper, and cinnamon. Roast for about 25 minutes until tender.
- Top each round with a slice of brie cheese and return to the oven for an additional 5-7 minutes until melted.
