  • 4 medium Russet potatoes (about 2 lbs)
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and scrub the russet potatoes, then prick them with a fork.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Let the potatoes cool slightly, then slice in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mix the potato flesh with butter, sour cream, salt, pepper, half of the cheddar cheese, bacon bits, and green onions until creamy.
  5. Transfer to a greased baking dish, top with remaining cheese and bacon bits.
  6. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
