- 4 medium Russet potatoes (about 2 lbs)

- 1 cup sour cream
- 2 cups shredded sharp cheddar cheese

Instructions
- Preheat the oven to 400°F (200°C). Wash and scrub the russet potatoes, then prick them with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
- Let the potatoes cool slightly, then slice in half lengthwise and scoop out the insides into a mixing bowl.
- Mix the potato flesh with butter, sour cream, salt, pepper, half of the cheddar cheese, bacon bits, and green onions until creamy.
