Ingredients

  • Eggplants
  • Ground beef or lamb
  • Sweet onions
  • Fresh garlic
  • Canned tomatoes
  • Red wine
  • Cinnamon stick
  • Béchamel sauce (butter, flour, milk)
  • Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper

Instructions

  1. Slice eggplants into 1/4-inch rounds, sprinkle with salt, and set aside to draw out moisture.
  2. In a skillet over medium heat, warm olive oil. Add chopped onions and cook until golden brown. Stir in minced garlic and ground meat until browned.
  3. Pour in canned tomatoes and red wine; add the cinnamon stick. Simmer for 15 minutes until thickened.
  4. For the béchamel: melt butter in a saucepan, whisk in flour until golden, then gradually add milk while whisking until thickened.
  5. Preheat oven to 375°F (190°C). In a baking dish, layer eggplant slices, meat mixture, and béchamel sauce repeatedly until all ingredients are used.
  6. Bake uncovered for about 45 minutes or until bubbly and golden brown. Allow cooling slightly before serving.
