Pistachio & Blackberry Cheesecake Towers are a stunning no-bake dessert, combining creamy pistachio cheesecake with tart blackberries for a delightful treat that impresses at any gathering.


Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Pistachio pudding mix
  • Cream cheese
  • Heavy whipping cream
  • Fresh blackberries
  • Powdered sugar
  • Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press firmly into a springform pan. Bake for 10 minutes or until golden brown, then allow to cool.
  2. In a bowl, beat softened cream cheese until creamy. Add the pistachio pudding mix and powdered sugar; mix until combined.
  3. Whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture. Fold in most blackberries, reserving some for garnish.
  4. Layer half of the filling over the cooled crust, add remaining blackberries, and top with the rest of the filling. Chill in the refrigerator for at least 4 hours or overnight.
  5. Serve garnished with reserved blackberries and optional honey or crushed pistachios.
