Ingredients
- Graham cracker crumbs
- Unsalted butter
- Pistachio pudding mix
- Cream cheese
- Heavy whipping cream
- Fresh blackberries
- Powdered sugar
- Vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press firmly into a springform pan. Bake for 10 minutes or until golden brown, then allow to cool.
- In a bowl, beat softened cream cheese until creamy. Add the pistachio pudding mix and powdered sugar; mix until combined.
- Whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture. Fold in most blackberries, reserving some for garnish.
- Layer half of the filling over the cooled crust, add remaining blackberries, and top with the rest of the filling. Chill in the refrigerator for at least 4 hours or overnight.
- Serve garnished with reserved blackberries and optional honey or crushed pistachios.
