- 2 red bell peppers
- 1 yellow bell pepper
- 1 lb Yukon Gold potatoes
- 1 sweet onion
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions
- Wash and cube the potatoes. Slice the bell peppers and chop the onion.
- Heat olive oil in a skillet over medium heat. Cook sliced sausages until browned (about 5 minutes).
- Stir in chopped onions and bell peppers; cook until onions are translucent (around 5 minutes).
- Add diced potatoes with garlic powder, salt, and pepper. Cover and simmer for 15-20 minutes until tender.
- Return sausages to the skillet, stirring gently for another 3-5 minutes until heated through.
