  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 lb Yukon Gold potatoes
  • 1 sweet onion
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Wash and cube the potatoes. Slice the bell peppers and chop the onion.
  2. Heat olive oil in a skillet over medium heat. Cook sliced sausages until browned (about 5 minutes).
  3. Stir in chopped onions and bell peppers; cook until onions are translucent (around 5 minutes).
  4. Add diced potatoes with garlic powder, salt, and pepper. Cover and simmer for 15-20 minutes until tender.
  5. Return sausages to the skillet, stirring gently for another 3-5 minutes until heated through.
