Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup coconut yogurt (unsweetened)
  • 1 cup fresh blueberries
  • 2 tbsp honey or maple syrup (adjust for sweetness)
  • 1/4 cup water (for blending)

Instructions

  1. Prepare your popsicle molds by ensuring they are clean.
  2. Blend strawberries with 1 tbsp honey and 2 tbsp water until smooth. Pour into the molds to create the first layer.
  3. In a bowl, mix coconut yogurt with 1 tbsp honey if desired. Add on top of the strawberry layer in the molds.
  4. Blend blueberries with remaining honey and water until just combined; pour over the yogurt layer.
  5. Repeat layering until molds are filled. Freeze for at least 4-6 hours or overnight.
  6. To serve, run warm water over the outside of the molds to release popsicles.
