  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell peppers (mixed colors), diced
  • 1/2 cup fresh basil leaves, torn
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, red onion, and bell peppers.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  4. In a large mixing bowl, combine cooled pasta with chopped vegetables and fresh basil. Drizzle dressing over the top.
  5. Toss gently until everything is evenly coated. Let sit for at least 30 minutes before serving for enhanced flavor.
