  • 2 lbs chicken thighs
  • 1 large onion, diced
  • 1 cup bell peppers, sliced (mixed colors)
  • 4 cloves garlic, minced
  • 2 tsp thyme (fresh or dried)
  • 2 tbsp tomato paste
  • 3 cups chicken broth (low-sodium)
  • 1 whole Scotch bonnet pepper (optional)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar or honey
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Rinse the chicken under cold water and pat dry.
  2. Heat oil in a large pot over medium-high heat. Sear chicken thighs until golden brown (5-7 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions until translucent (about 3 minutes). Add garlic and bell peppers; cook until fragrant.
  4. Stir in tomato paste for a minute before adding chicken broth, soy sauce, thyme, and Scotch bonnet pepper.
  5. Return seared chicken to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.
  6. Taste and adjust seasoning if necessary.
