- 2 tbsp tomato paste
- 3 cups chicken broth (low-sodium)
- 1 whole Scotch bonnet pepper (optional)
- 2 tbsp low-sodium soy sauce
- 1 tbsp brown sugar or honey
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Rinse the chicken under cold water and pat dry.
- Heat oil in a large pot over medium-high heat. Sear chicken thighs until golden brown (5-7 minutes per side). Remove and set aside.
- In the same pot, sauté onions until translucent (about 3 minutes). Add garlic and bell peppers; cook until fragrant.
- Stir in tomato paste for a minute before adding chicken broth, soy sauce, thyme, and Scotch bonnet pepper.
- Return seared chicken to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes.
- Taste and adjust seasoning if necessary.
