  • 1 medium zucchini (sliced)
  • 14 oz canned diced tomatoes (with juice)

  • 2 tbsp extra virgin olive oil
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves (chopped)
  • Salt & pepper to taste

Instructions

  1. Cook the pasta: In a large pot, boil salted water. Add rigatoni and cook until al dente according to package instructions. Drain and set aside.
  2. Sauté the sausage: In a large skillet over medium heat, add olive oil. Crumble in the sausage and cook until browned (about 5 minutes).
  3. Add aromatics & veggies: Stir in minced garlic and diced zucchini; sauté until zucchini is slightly soft but still crisp (about 3 minutes).
  4. Pour in tomatoes: Add canned diced tomatoes (with juice), salt, and pepper. Simmer for about 10 minutes until thickened.
