  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sliced bell peppers; sauté for about 5 minutes until softened.
  2. Crumble the Italian sausage into the skillet, cooking until browned and cooked through, about 7-10 minutes.
  3. Stir in minced garlic, oregano, and red pepper flakes; cook for an additional minute until fragrant.
  4. Add crushed tomatoes to the skillet, stirring well. Simmer for about 10 minutes until slightly thickened.
  5. Meanwhile, boil salted water in a pot and cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  6. Toss the drained pasta into the skillet with the sauce mixture, adding reserved pasta water as needed to achieve desired consistency.
