  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and measuring the other components.
  2. In a large skillet over medium heat, add olive oil and sear chicken breasts for about 5 minutes on each side until golden brown. Remove chicken and set aside.
  3. In the same skillet, sauté chopped onions for 3-4 minutes until translucent.
  4. Stir in garlic powder and smoked paprika before gradually adding chicken broth while scraping up any browned bits from the pan.
  5. Lower heat and mix in heavy cream; let simmer for about 5 minutes until slightly thickened.
  6. Return the chicken to the skillet, spooning sauce over it. Cover and simmer for another 10-15 minutes.
  7. Cook rice according to package instructions to serve alongside the smothered chicken.
