  • 1 cup bell peppers (mixed red and green), sliced thinly

  • 3 tbsp low-sodium soy sauce
  • 2 tbsp chili paste (adjust to taste)
  • 1 tbsp brown sugar
  • 2 tsp cornstarch mixed with 2 tbsp water
  • 2 tbsp vegetable oil (high smoke point)
  • 2 green onions, sliced for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces and season lightly with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and chopped onion; sauté until fragrant and translucent (about 2-3 minutes).
  3. Add seasoned chicken to the skillet and stir-fry until golden brown and cooked through (5-7 minutes).
  4. Toss in sliced bell peppers and stir-fry until softened but still vibrant (3-4 minutes).
  5. In a separate bowl, combine soy sauce, chili paste, brown sugar, and cornstarch mixture; pour over chicken and veggies.
  6. Cook while stirring until the sauce thickens (approximately 2-3 minutes). Garnish with sliced green onions before serving.
