- 8 flour tortillas (10-inch)
- 2 cups shredded cheddar and Monterey Jack cheese
- 2 cups enchilada sauce (store-bought or homemade)
- ½ cup sour cream (for serving)
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp chili powder
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, sauté onion and garlic over medium heat until fragrant (3-5 minutes).
- Add ground beef; cook until browned (7-10 minutes). Drain excess fat.
- Stir in cumin, chili powder, and half of the enchilada sauce; simmer for 2-3 minutes.
- Fill each tortilla with beef mixture and cheese; roll tightly and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over rolled tortillas and top with remaining cheese.
- Bake for 20-25 minutes until bubbly and golden brown. Serve hot with sour cream.
