  • 8 flour tortillas (10-inch)
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • ½ cup sour cream (for serving)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, sauté onion and garlic over medium heat until fragrant (3-5 minutes).
  3. Add ground beef; cook until browned (7-10 minutes). Drain excess fat.
  4. Stir in cumin, chili powder, and half of the enchilada sauce; simmer for 2-3 minutes.
  5. Fill each tortilla with beef mixture and cheese; roll tightly and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over rolled tortillas and top with remaining cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown. Serve hot with sour cream.
