  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium beef broth
  • 2 cups elbow macaroni
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Select the sauté function on your Instant Pot and heat olive oil until shimmering. Add chopped onion and bell peppers; sauté for 3–5 minutes until softened.
  2. Add diced beef in batches, browning it on all sides for enhanced flavor.
  3. Stir in minced garlic, paprika, oregano, salt, and pepper; cook for another 1–2 minutes until fragrant.
  4. Pour in diced tomatoes and beef broth, scraping any brown bits from the bottom of the pot.
  5. Sprinkle elbow macaroni over the mixture without stirring to prevent clumping.
  6. Close the lid securely and cook on high pressure for 8 minutes. Use the quick-release method when done, stir well before serving.
