Ingredients

  • 2 large russet potatoes
  • 8 oz steak (sirloin or ribeye)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup full-fat sour cream
  • ¼ cup bacon bits
  • 2 tbsp chopped chives or green onions
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Poke holes all over with a fork.
  3. Bake the potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
  4. While the potatoes bake, heat oil in a skillet over medium-high heat. Season steak bites with salt and pepper, then sear for about 3-4 minutes per side until browned.
  5. Once baked, slice open the potatoes and fluff the insides with a fork. Add butter, cheese, sour cream, bacon bits, chives, and top with steak bites.
