- 2 large russet potatoes
- 8 oz steak (sirloin or ribeye)
- 1 cup shredded sharp cheddar cheese
- ½ cup full-fat sour cream
- ¼ cup bacon bits
- 2 tbsp chopped chives or green onions
- 2 tbsp butter
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the russet potatoes. Poke holes all over with a fork.
- Bake the potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
- While the potatoes bake, heat oil in a skillet over medium-high heat. Season steak bites with salt and pepper, then sear for about 3-4 minutes per side until browned.
- Once baked, slice open the potatoes and fluff the insides with a fork. Add butter, cheese, sour cream, bacon bits, chives, and top with steak bites.
- Serve immediately and enjoy!
