  • 10 egg roll wrappers
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 pound ground beef or turkey
  • 2 tablespoons nacho seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 jalapeño, sliced (fresh or pickled)
  • Sour cream for serving
  • Oil for frying

Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and mix in the nacho seasoning.
  2. Remove from heat and fold in the cheddar and Monterey Jack cheeses, black beans, and sliced jalapeños until well combined.
  3. Lay an egg roll wrapper diagonally on a flat surface. Spoon about two tablespoons of filling into the center. Fold over two corners and roll tightly while tucking in sides to seal.
  4. Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches until golden brown, about 3–4 minutes per side.
  5. Drain on paper towels and serve warm with sour cream.
