- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 pound ground beef or turkey
- 2 tablespoons nacho seasoning mix
- 1 can (15 oz) black beans, drained and rinsed (optional)
- 1 jalapeño, sliced (fresh or pickled)
- Sour cream for serving
- Oil for frying
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and mix in the nacho seasoning.
- Remove from heat and fold in the cheddar and Monterey Jack cheeses, black beans, and sliced jalapeños until well combined.
- Lay an egg roll wrapper diagonally on a flat surface. Spoon about two tablespoons of filling into the center. Fold over two corners and roll tightly while tucking in sides to seal.
- Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls in batches until golden brown, about 3–4 minutes per side.
- Drain on paper towels and serve warm with sour cream.
